Ingredients
¾ cup Sweet Potato Puree
¾ cup rolled oats
¾ cup unsweetened almond milk
3 eggs
1 ½ teaspoons baking powder
1 1/8 teaspoons cinnamon
1/3 teaspoon salt
Zest of orange
Cooking spray
Directions
Using your MyMini Turkey Waffle Maker or any other MyMini Waffle Maker, begin by plugging your unit in and allowing it to pre-heat.
Place your sweet potato puree, oats, flour, milk, eggs, baking powder, cinnamon, salt, and orange zest into a blender. Blend until well combined and oats are mostly blended.
Once your Waffle Maker is fully pre-heated, spray cooking surfaces with cooking spray. Carefully pour about 1/3 cup of batter onto the bottom cooking surface and close. Let cook for about 5 – 7 minutes.
Check that waffle is thoroughly cooked (slightly golden-brown on the outside) and carefully remove from the cooking plate.
Repeat steps 3 & 4 until all your batter is used up.
Serve with egg scramble, crispy turkey, breakfast sausages, or other savory breakfast foods!
Recipe Note
For a slightly sweeter waffle, add 1 – 2 tablespoons of
brown sugar and/or cinnamon sugar to the batter and serve with maple or
raspberry syrup and candied pecans.
