Ingredients
- 2 cups All Purpose Flour
- ¼ cup white Sugar
- ½ cup Brown Sugar
- 2 ½ tsp Ground Cinnamon
- 4 tsp Baking Powder
- ¼ tsp Salt
- 1 ¾ cups Milk
- ½ cup Vegetable Oil
- 1 tsp. Vanilla Extract
- 2 Egg Whites
- Cooking Spray
- 2 sheets of frozen puff pastry, thawed
- Turbinado sugar
- 1 egg, beaten
- 2 Granny Smith apples
- ¼ cup Unsalted Butter
- ¼ cup Dark Brown Sugar, packed
- 1 Tbsp Cinnamon
- 1 tsp Nutmeg
- 1 Tbsp Lemon Juice
- Cinnamon Waffles
- Cinnamon Buttercream (flavor your favorite buttercream or frosting recipe with cinnamon!)
- Sugared Puff Pastry Disc
- Apple Compote
- Whipped Cream

Directions
CINNAMON WAFFLES INSTRUCTIONS:
Preheat the appliance as directed.
- Whisk the four, white sugar, brown sugar, cinnamon, baking powder, and salt together in a bowl until no lumps remain.
- Pour milk, vegetable oil, and vanilla extract into the flour mixture; stir until just combined.
- Beat egg whites until foamy in a large glass or metal mixing bowl until soft peaks form. Lift your beater or whisk straight up: the egg whites will form soft mounds rather than a shapr peak.
- Fold the beaten egg whites into the batter.
- Pour batter into the preheated well of the lower cooking surface.
- Close the lid and cook for 4, then flip the iron. Cook for another 2 minutes.
- Open the lid with a potholder or oven mitt.
- Remove waffles with a wooden or plastic kitchen utensil.
SUGARED PUFF PASTRY DISC INSTRUCTIONS
Preheat the oven to 400F.
- Roll out the sheet of puff pastry, and use a round cutter to cut into a circle the same size as your waffles.
- On a baking sheet lined with parchment paper or a silicone baking mat, line up the puff pastry circle, making sure they are not touching.
- Use a fork to prick the all over the surface of the puff pastry rounds.
- Brush the surface with the beaten egg using a pastry brush.
- Sprinkle the surface with turbinado sugar.
- Bake for 10-15 minutes, or until the pastry is golden brown and puffed.
- Once baked, remove from the oven and allow to cool completely.
APPLE PIE COMPOTE INSTRUCTIONS
Peel and dice apples into 1 cm pieces.
- In a medium sized pot, combine the butter, dark brown sugar, cinnamon, nutmeg, and apples.
- Cook over medium high heat until the apples start releasing their juices and the mixture starts to simmer.
- Add the lemon juice, and make sure to stir occasionally so the mixture does not stick to the bottom of the pot.
- Cook for another 5-10 minutes or until the apples are cooked through and the sauce has thickened.
- Allow the compote to cool completely before topping your waffles. If you’re not using this compote right away, store in an airtight container in the fridge for up to 3 days.
WAFFLE ASSEMBLY INSTRUCTIONS
Place the cinnamon waffle on the bottom of your plate.
- Spread a layer of cinnamon buttercream on the waffle.
- Place the sugared puff pastry disc on top, and spoon the apple pie compote over the puff pastry.
- Top with whipped cream and freshly grated cinnamon!
